The Large Big Green Egg is a ceramic charcoal cooker for grilling, roasting, smoking and baking. With a ConvEGGtor included for indirect cooking, it gives you room to explore more than the familiar barbecue menu: think grilled fish for supper, a weekend roast or pizza cooked outdoors.
It is a good starting point for households regularly cooking for four to six. The best size also depends on what you cook. Individual portions spread across a grid take up space differently from a roasting joint, and pans or racks affect the arrangement. If you regularly entertain larger groups, compare the Large and XL before choosing.
For direct grilling, food cooks on a suitable surface above the charcoal. Use that arrangement for dishes such as steaks, vegetables and fish, following the setup for your chosen recipe.
The ConvEGGtor creates a barrier between the food and the direct heat of the fire. This opens up roasting, baking and longer cooks. It is different from a baking stone: the ConvEGGtor changes the heat arrangement, while a stone provides a surface beneath the food. A Large-compatible baking stone is an optional addition for pizza and bread.
The ceramic body retains heat, while the airflow controls let you manage the charcoal fire. The dome thermometer helps you monitor the cooking environment; use a suitable food thermometer when checking the internal temperature of ingredients.
Learning the airflow settings and allowing the cooking setup to heat through are part of getting familiar with your EGG. Follow the manufacturer’s instructions for lighting, operation and shutdown. Different recipes and accessories call for different arrangements, so there is no single temperature setting for every cook.
